    • Turn the potato and shave the opposite end. Repeat the procedure for each side of the potato. Continue with the remaining potatoes.
    • In a heavy, 4-inch-deep, 4-inch-wide saucepan, heat oil to 375°F. Shake a handful of potatoes in oil; avoid crowding. Stirring occasionally, fry until crisp and slightly brown, 30 to 60 seconds.
    • Using a slotted spoon, remove and drain on paper towels. Prepare with salt. Continue with the remaining potatoes.
