    Ingredients: 

    • 1 cup smooth natural peanut butter
    • ¾ cup chopped Medjool dates
    • ¾ cup bittersweet chocolate chips
    • ½ cup chopped unsalted dry-roasted peanuts
    • ¼ teaspoon salt
    • ½ cup rolled oats

    Directions: 

    • In a medium bowl, soak dates in enough boiling water to cover for 10 minutes. Reserve the soaking water after draining.
    • In the meantime, line an 8-inch square baking dish with parchment paper, allowing access to hang over two sides. Spray the parchment lightly with cooking spray.
    • In a food processor, combine the soaked dates, peanut butter, oats, and salt; process until very finely chopped and beginning to clump.
    • If the mixture appears to be dry, add 1 tablespoon of the remaining soaking water. Transfer peanuts to a medium bowl and whisk in. Evenly and firmly press the ingredients into the prepared pan.
    • Melt the chocolate chips in the microwave for 2 to 3 minutes at Medium power (50%). Distribute the chocolate over the oats in an equal layers.
    • Cool in the fridge for at least an hour, preferably longer. Take out of the pan by lifting the hanging parchment. Reduce to 16 equal squares.
